Here's our 2021 "Good Luck" Meal! I also gladly did NO LAUNDRY today. 💁🏻♀️I'm hoping the cousin of black eyed peas counts as it all I had!
We ate Roasted Pork Loin and Cabbage with Purple Hull Peas and Fried Green Tomatoes w/ Salsa Verde Ranch.

Farm Fresh Egg
Preheat oven to 350 degrees. Sauté some garlic and onion in shallot butter. Add the cabbage. Cook for about five minutes. Transfer to a Dutch oven.
Rub the pork with seasons of your choice. I coated with smoked shallot butter and tossed in Tiger Seasoning and black pepper. Place pork on top of the cabbage blend and cook until 145 degrees.
For the peas, place one cup broth in the instant pot. Add peas, canned tomatoes, garlic, onion and Beasley's Poultry Blend. Pressure cook on high for two minutes. Manually release.
For the tomatoes, I mixed Bertie's Cheddar Chive Biscuit Mix, corn meal, and garlic powder. Use a TN Real Milk buttermilk and farm fresh egg wash, coat with flour/meal mix, and fry in vegetable oil. I served with a salsa verde ranch sauce.
I WRECKED the kitchen, but all of this was simple, delicious and largely local.
