Cabbage Sausage Soup


For those of you who scored a giant head of cabbage from the market recently, check out this recipe. I made cabbage soup with mine...well, with half of it! ⁣

Head of Cabbage⁣
J's Meats and More German Sausage ⁣
1 Quart Windy Acres Chunked Tomatoes⁣
Olive oil ⁣
Thyme⁣
Italian Seasoning⁣
S&P⁣
Garlic⁣
Onion⁣
Potatoes⁣
Carrots⁣
Broth⁣

Sauté the garlic, onion, and carrots in olive oil. Add the German sausage, cut in bite size pieces, and brown. Add a splash of broth and scrape with droppings. I used my homemade chicken bone broth. Add in chopped cabbage, potatoes, tomatoes, thyme, Italian seasoning and S&P. Cover with broth. I used my Instant Pot and cooked on high pressure for 4 minutes with a natural release. You can also slow cook or cook on the stove top. ⁣

That's it. This is a fully balanced, nutritious meal. It was perfect for my little family as we battle sickness. ⁣

Cabbage is an anti-inflammatory food, is full of vitamin c, and good for digestion. Bone broth is also anti-inflammatory and full of protein and collagen. Carrots are full of potassium, fiber and antioxidants. Garlic is highly nutritious and has medicinal properties. Tomatoes are full of vitamin c and fiber. ⁣
