These turned out so yummy! They are packed with protein and healthy fat. The best part is they satisfy your sweet tooth!
You need 4 tbls coconut oil (melted and divided), 8 tbls of chocolate protein powder (also divided, my fave is Shakeology) and 8 tsp of natural peanut butter. Line a cupcake pan with 8 liners. Mix 1/2 the protein powder and 1/2 the melted coconut oil. Scoop aprox 1 tsp into each liner. Place in freezer and freeze for 5 minutes. Remove and spoon in 1 tsp of PB in each. Mix remaining protein powder and coconut oil. Layer on top of the peanut butter. Let freeze for 30 minutes. I leave them in the freezer and enjoy as frozen treat!
