Oh my goodness!!! These honey roasted beets were the perfect way to start my day today!
Beets are sooooooo good for you. They are full of nutrients and low in calories.
They can also help keep your blood pressure in check. According to Healthline.com, "Beets contain a high concentration of dietary nitrates, which have a blood pressure-lowering effect. This may lead to a reduced risk of heart attacks, heart failure and stroke." These same nitrates may even help increase blood flow to the brain improving cognitive function.
Beets are anti-inflammatory and full of fiber and antioxidants making them a cancer fighting super food!
I like mine roasted but you can also grate them and add to cole slaw, boil them or juice them!
For these, I simply cut them up and purposely did not peel. I leave the peel on most everything I can in order to enjoy the increased benefits of additional fiber. I tossed on EVOO, Harbin Hollow Honey, and S&P. I roasted for 25 minutes at 400 degrees and they were perfect!
