Superfood Spotlight- Beets!


Oh my goodness!!! These honey roasted beets were the perfect way to start my day today! ⁣

Beets are sooooooo good for you. They are full of nutrients and low in calories. ⁣

They can also help keep your blood pressure in check. According to Healthline.com, "Beets contain a high concentration of dietary nitrates, which have a blood pressure-lowering effect. This may lead to a reduced risk of heart attacks, heart failure and stroke." These same nitrates may even help increase blood flow to the brain improving cognitive function. ⁣

Beets are anti-inflammatory and full of fiber and antioxidants making them a cancer fighting super food!⁣

I like mine roasted but you can also grate them and add to cole slaw, boil them or juice them! ⁣

For these, I simply cut them up and purposely did not peel. I leave the peel on most everything I can in order to enjoy the increased benefits of additional fiber. I tossed on EVOO, Harbin Hollow Honey, and S&P. I roasted for 25 minutes at 400 degrees and they were perfect! ⁣
