Our summer has been BUSY, and I don't get to cook as much as I'd like but I've been squeezing in some meals here and there to share with y'all! Tonight's spaghetti squash dinner was really good and super healthy.
Being able to support so many small businesses & also creating jobs for people I care about in the middle of a global pandemic has to be the most rewarding feeling ever. What they likely don't realize is their positive impact on me is likely way greater than my impact on them.
When I food prepped this week I mixed two cups of plain Greek yogurt, 1 cup of natural peanut butter, and 1/2 cup of honey to make the base for this dish. It's a PB and honey yogurt that can be served as a dip, spread, or simply topped with your favorite healthy toppings.
