Honey is the thick, golden liquid produced by busy honeybees from the nectar of flowers and their unique enzymatic process combined with water evaporation. The process is fascinating. We love observing our bees here at the Harbin Hollow apiary! Research suggests honey possesses antioxidant and antibacterial properties making it a wonderful health and wellness supplement.
Popular for its sweet, delicious flavor, we use honey in everything from our

elderberry syrup to everyday recipes like smoothies, salad dressings, granola, desserts and more. The flavor of honey can vary based on the nectar harvested by the bees when it is created.
When honey is heated and pasteurized it loses some of its health benefits. Local beekeepers, such as Harbin Hollow, will provide you with the best raw, unadulterated honey that provide the most benefit to your health.

Harbin Hollow honey is sourced from licensed and inspected apiaries here in middle Tennessee, including our own. Our honey is never heated above the temperature found in the hive allowing it to maintain its nutritional value.
Benefits of Local Honey
When we started making elderberry products, finding a local, trusted, inspected honey farm to supply us was extremely important. Unfortunately, many commercial honey brands found on grocery store shelves have been adulterated with sugar, high fructose corn syrup, or antibiotics. Our honey is only sourced from our own hives or Pick TN honey farms inspected and permitted by the TN Department of Agriculture.

Honey is a natural sweetener, has a complex composition, and compared to sugar, has a lower glycemic index and energetic value.[3] Honey contains antioxidant vitamins E and C as well as minerals.[4]
However, honey does still react in the body similarly to sugar, so if you are a diabetic, use it in moderation and monitor your blood sugar levels when consuming. For those of you watching your blood glucose levels, we have our “No Sugar Added” Elderberry Syrup sweetened with a blend of erythritol and Stevia.
Honey has also been known to effectively soothe a cough, even in children. “A single dose of honey before bedtime was shown in recent studies to diminish cough and the discomfort experienced by children and their parents. [5]
